Chocolate cake (with mayonnaise)
What? Chocolate cake with what? Yes you read that right. Mayonnaise! Before you click away hear me out. While my inspiration was because of a jar of unused Mayo that I didn't want it go to waste. But when you think about what's in mayonnaise - it's all great ingredient that you'd normally put in a cake anyway. Oil, yes! eggs, yes! lemon, why not! So you see, mayo not only will go great with your cake - it actually will enhance it and make the cake-making process super easy. The more important question is: are you ready for cake?
I know getting all the ingredients may be a bit tough these days. I had a hard time with some items. That's why this recipe only needs 6 things, literally. Less measuring, less dish washing, less dividing and mixing - all done in one big bowl. I scored some all purpose flour which is good to make anything from salty to sweet treats. It's versatile depends on what you add into it. Cocoa powder however, seems to be out everytime I went to the store. No matter, you know the isles that has organic and health foods? Try there! That's where I got my organic cocoa powder which actually was about the same cost of normal non-organic version. This stuff is great to make snacks with or if you want to have some hot cocoa. So haay, I'm happy with that.
What you need:
- 2 cup of flour
- 1 cup sugar
- 1/2 cup cocoa powder
- 2 tsp of baking soda
- 1 tsp of vanilla extract
- 1 cup mayo
Recipe:
- mix everything in a single bowl and pour batter into a 8x8 inch bakeware. I recommend oil the bakeware first so the cake does not stick.
- 350F for about 30-35 min. Do the toothpick test to make sure your toothpick comes back clean. It's a great method to make sure your cake is done but still moist.
- That's it! Sounds super easy and it was super easy doing it. Your active time was about 10 min, and the remainder of the time was idle time. In fact, I did a 30 min work out while this baby was baking in my oven. So I can justify eating it later haha.
Notes:
- My batter felt a bit thick when I poured it in the bakeware but the result was not bad at all. It was a bit hard to spread the batter nicely but it does spread out during the baking process.
- If you read my other baking recipes, you know I like to cut my sugar and oil use. I did for this one also - but kind of regret it. Use the whole cup of sugar please. I used about 3/4 cup and it was not as sweet as I liked. I'm going to eat mine with a drizzle of honey so just make sure you don't skip your sugar when you bake yours.
- Just look at the super moist and fluffy cake here. Okay I had mine with strawberries, a scoop of almond butter, and some honey drizzle. Nothing is better this is sooo good.
