French toast with homemade mango topping - Sunday brunch

The sun is shining, the birds are singing, and I can feel spring in the air. This weekend has been absolutely beautiful out. Though not a native fruit, I was lucky enough to score a box of fresh mango (9 in a box) last week and want to make the most out of those. Today I am making easy egg bread (or Challah bread) french toast with fresh mango homemade toppings - all in 20 min.

mango toppingA box of Mar Azul mangoes (from Peru) in the local grocery store for $3.99 (I have no idea how this is possible or who your suppliers are but Thank you T&T! https://www.tntsupermarket.com/), along with some leftover egg bread, this makes a healthy, hearty breakfast. I like making my own fruit toppings as it's better, less sugar, and more nutritious than uh... sugar syrup. So here we go!

Mango topping Homemade:
- 1 large mango peeled and cubed (you can cut it finer but I kept the cubes chunky to keep some of the original mango texture), throw into small pot with 1/2 tsp of non-salted butter, 1/2 tsp of cinnamon, 1 tbsp of brown sugar. bring to bubbling boil and then lower heat to simmer

french toast cookingNote: If you don't have fresh mango, no worries! I have done this recipe with: fresh peaches, pears, apples, blueberries, strawberries. I have also done this sauce with: frozen mango or peach, mixed berries, pineapple. So you see, it's all good. Some fruits like berries require a bit of corn starch to thicken it up, other fruits like mango and peaches are fine without the corn starch. Sometimes the fruits are not sweet enough, hence I add a bit of sugar (typically brown sugar) to sweeten the sauce. I also like to add a dash of cinnamon for its anti-inflammatory health benefits and it really brings out the flavor of fruits. 

Easy french toast:
french toast- cut 4 slices:1/2 inch of challah bread or pre-sliced egg bread. 
- crack 3 eggs, scramble, mix with 2 tsp of water (you can use milk too, some may also add vanilla extract to make it more fancy. But it's really fine without :) )
- Heat 1 tsp non-salted butter in pan until butter is melted, turn heat to med. Dip the bread slices in egg mixture and put into pan. Cook for 1 min or so then flip - you are looking for a golden color with a bit browning.

Note: I like egg bread/challah bread the best for french toast. Other breads are ok.. but egg bread covered in egg wash, it's just double eggy-fantastico! Also the egg breads are a bit sweeter which is great.

And finally, I decided not to put icing sugar on top. I know it looks nice but over the years I find it's not adding much to the flavor, and so I skipped the added (purely decorative) sugar.
